Cauliflower and leek soup

6 cloves garlic minced
1 head cauliflower chopped
3 leeks roughly chopped
1 Tablespoon olive oil
4 or so cups chicken stock (depends on how thick/thin you want the soup)

Heat oil in large sauce pan, add garlic and cloves saute. Add cauliflower and cook 2-5 more min. Add stock and bring to a boil, stirring constantly. Reduce heat and simmer 30 min. use a hand blender to blend the soup.

Lemon Garlic Tilapia

4 tilapia fillets 1 clove garlic minced 1/4 cup fresh parsley 3T lemon juice and zest of one lemon Preheat oven 375. Spray baking dish with nonstick cooking spray. rinse and pat tilapia dry, place in pan. pour lemon juice of fillets. Sprinkle with garlic and parsley. Cook til fish flakes easily about 30 min

normal!!! notice my ticker? after 33 pounds of weight loss i am now 'normal' :)

Yay! to be normal, well at least in one area of life. With my journey so far this year I have gone from borderline obese (don't judge) to normal. My goal is to lose at least 4 more lbs on this round and then really focus on strength training and endurance. I have started doing a weekly menu plan which I will start posting :) Yay for maintaining I am excited for this next phase and to continue to be healthy. One I have learned ALOT this year are all the yummy veggies I haven't really cooked with much. Generally we have a supply of carrots, broccoli, and peas in the freezer to be zapped in the microwave and put as a side. So here is to my goal of weekly menus (which I have been doing) that will now be posted weekly :)

Recipes?!?!

I have been a slacker at recipes, but at this point in my diet the list of food is pretty limited but I do have some favorites :) here is one
APPLE PIE
okay not apple pie necessarily but a good treat :)
here is what you do:
peel an apple
eat the peel (lots of nutrients in the peel)
dice the apple
put in a small sauce pan
add a little water,
dash cinnamon, nutmeg, and cloves
boil til the apple is tender
add a few drops of vanilla stevia
ENJOY!!!! Seriously this is SO yummy and doesn't take long to make at all.

YAY! Stall over :)

I know 2 days doesn't seem like much of a stall, but I was feeling kinda defeated yesterday. With such a strict diet and NO cheating I felt frustrated. SO what did I do? I colored my hair, and I had a Diet coke :) It helped to lift my spirits and give me something sweet without cheating too badly. AND I WAS DOWN 2 LBS THIS MORNING!!!!!!!!!!!! I LOVE that this diet is really detoxing me from processed foods and sugar. If you start looking at labels, sugar is everywhere. Who would have thought it would be such a struggle to avoid sugar?!?! No wonder we, and our children, are obese. Condiments are half sugar(well high fructose corn syrup) I love that this diet makes me much more aware of what I am eating and if not more importantly what I am feeding my kids. Anyways I am in much better spirits and glad the scale is starting to be a better friend :) Now if I could only say good bye to Diet coke............it's definitely my favorite sin.

....and stalling, sort of.

The bad news...I haven't lost and lbs the last 2 day, major bummer. The GOOD news my fat percentage has gone down and my hydration has gone up. I can tell my pants are getting loose, in fact I am hopefully washing them for the last time and then in the trash(or to DI) they go!

crusing along

It's SOOO nice to be past week one :) I lost 8lbs which is great cause I spent 3 months working hard exercising, counting calories and only lost 3lbs that really frustrated me. Once it started to get really cold my joints started to ache...........AHHHH am I that old? Not really but because I had an excess amount of weight on me it was putting too much stress on them. So I can't wait to get the weight off and run that much easier :D BIG HAPPY FACE!

Day 3

No sugar is tough for me. I am so glad I am done with day 3, by tomorrow my cravings shouldn't be as intense. I have a list of things for me to do to keep my mind on things other than food :) here are a few things from my list:
-Paint toenails
-sew table clothes (the fabric store had some really pretty fabric and fun birthday fabric for $2 a yard SWEET!)
-sit in my SAUNA
-go shopping
-reorganize closet and dresser
-finish reading "return" by Robert D Hales LOVE this book
-yoga
-make a volcano with my 2 year old
-PLAY LOTS WITH MY KIDS!!!!!!
